I have a lot of dip recipes, but I am always on the search for a new appetizer that is a little different and still delicious. Frozen spinach is very easy to store and the rest of the ingredients are always in the pantry, so it is an easy last minute snack. It has lots of iron and yummy cheese! Everyone loves them! They are 4 points + for a small square or you can cut them into large squares and eat it as a meal with a large salad! Enjoy!!
Garlicky Spinach Cheese Squares

Ingredients
- 4 tbs. butter
- 3 eggs
- 1 cup all-purpose flour
- 1 cup milk
- 1 tsp salt
- 1 tsp baking powder
- 1 pound shredded part skim mozzarella cheese
- 2 (10 ounce) packages frozen chopped spinach
- 1 tbs. chopped onion
- 1 garlic clove minced
- ¼ cup parmesan cheese
Directions
- Defrost spinach in microwave and then put in a colander and push down to get out any excess moisture. (I usually also squeeze in my hands to make sure it is not wet)
- Preheat oven to 350 degrees. Grease a 9×13 inch baking dish.
- Melt butter in a large bowl in the microwave. Let cool.
- Add eggs to bowl and beat well. Mix in flour, salt, milk and baking powder. When the dough is well combined, mix in cheeses, garlic, spinach, and onion. Spoon mixture into the baking dish and evenly distribute.
- Bake for 35 minutes. Let cool 45 minutes then cut into 16 squares.
